Banana Muffin


Ingredients:

  • 2 bananas (overripe)

  • 1 ½ cup almond flour

  • 1 tsp baking soda

  • ¼ tsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

  • 2 eggs

  • ¼ cup coconut oil

  • 3 tbsp honey

  • ⅓ cup walnuts (chopped)


Instructions:

  1. Preheat oven to 350°F

  2. Grease or line muffin tin with parchment paper

  3. In a mixing bowl, combine the almond flour,baking soda, salt, and cinnamon

  4. In another mixing bowl, mash up the bananas

  5. Add the eggs, coconut oil, vanilla, and honey to the mashed bananas and mix until well combined

  6. Mix together the wet and dry ingredients until well combined

  7. Stir in the chopped walnuts

  8. Add the dough to the muffin tin, and bake for 20-25 minutes, or until a toothpick comes out clean

  9. Serve with plain cream cheese
