Chicken soup


Ingredients:

  • 1 whole chicken

  • 10 cups of water

  • 10-12 garlic cloves (crushed)

  • ½ onion  (diced)

  • 1 inch piece ginger (grated)

  • 2 leeks (chopped)

  • 1 bunch green onions (chopped, for garnish)

  • ½ teaspoon black pepper

  • Salt and pepper to taste

  • Kimchi (for serving)


Instructions:

  1. Place the chicken, water, garlic, ginger, onion, leek, and black pepper in a large stock pot

  2. Bring to a boil over high heat, once boiling reduce the heat to medium and continue to boil, covered, for 40-50 minutes

  3. Once the time is up, stick a knife through the thickest part of the breast to see if the chicken is cooked

  4. Remove the pot from the heat, and remove the chicken from the pot. Once the chicken is cool enough to handle, remove the meat from the bones, tearing it into small bite size pieces. Discard leftover bones and fat

  5. Serve the soup with the chicken, kimchi, and green onions. Season with salt and pepper to taste
